辐照食品是指用X射线、γ射线或电子直线加速器处理的食品[1]。辐照食品的出现与转基因食品一样,改善了全球的粮食短缺问题。辐射技术的运用,使食品得以保存,减少了由昆虫、细菌污染引起的食物损失问题,从而从一定程度上缓解了全球粮食危机问题。同时辐照技术可引起食品的物理、化学及生物变化,从而影响食品的营养价值和感官特性[2]。在公众生活中,辐照技术使食品得以保鲜,口感上更好,但其涉及的安全性问题仍不容忽视。
Irradiated foods are foods that are treated with X-rays, gamma rays, or electron linacs [1]. The emergence of irradiated food, like genetically modified food, has improved the global food shortage. The use of radiation technology to preserve food, reduce food losses caused by insect and bacterial contamination, and thus to some extent, alleviate the global food crisis. At the same time irradiation technology can cause physical, chemical and biological changes in food, thus affecting the nutritional value of food and organoleptic properties [2]. In public life, irradiation technology makes the food fresh and taste better, but the safety issues involved can not be ignored.
