鼠伤寒沙门氏菌引起的食物中毒,常见于食用马、牛、羊、猪等多种脊椎动物。因吃驴肉引起中毒者较少见。现将我县杨郎公社杨郎大队第一生产队社员,吃病死驴肉引起38人食物中毒的调查报告如下:流行病学调查1981年7月8日清晨,该队社员牛××家的小驴,因病死亡。当日上午由本队两户社员剖尸后,将30斤带骨驴肉均分。下午五时许,清洗肉块,切成3~4斤左右。煮时水未全部浸没肉块,锅盖也不严,水开后以文火炖煮2~3小时。傍晚约八时,将熟肉分送给本队11户亲邻,当晚31人吃肉,次日又有12人吃;其中32人凉拌,11人加油炒吃;食肉者计43人。多数吃肉量在1~5两。
