赤眼鳟隶属鲤形目、鲤科、雅罗鱼亚科、赤眼鳟属,俗称“红眼”。它是长江名贵的野生经济鱼类,肉质细嫩,味道鲜美。泰兴市经过近三年的驯养试验,已于2003年取得长江赤眼鳟人工繁殖的成功,这对挽救长江濒危物种,开发新的养殖品种具有重大意义。2004年泰兴市共推广池塘赤眼鳟成鱼 Red-eye trout belonging to common carp, Cyprinidae, Arroyo subfamily, red-eye trout, commonly known as “red-eye.” It is the Yangtze River’s precious wild economic fish, delicate meat, delicious.
