晋江市学校食堂餐饮具消毒效果分析

目的了解晋江市2012年学校食堂全年餐饮具监测的现状,为今后加强学校集体食堂监督指导提供参考。方法按GB 14934-1994《食(饮)具消毒卫生标准》中的大肠菌群快速纸片法进行检测,对学校食堂清洗消毒备用的各类餐具随机抽样进行大肠菌群测定。结果共抽检学校179所餐饮具1 790份,总合格率88.6%(空白对照试验均为阴性结果,质控样品总合格率为100%)。中学的食堂餐具消毒合格率最高95.6%(306/320),其次是幼儿园89.1%(936/1 050),最低为小学81.9%;大件餐具合格率(96.9%)高于小件餐具(75.3%)。结论须督促条件差的学校食堂开展自查自纠,落实整改措施,提高餐具消毒质量。 Objective To understand the status quo of catering tableware monitoring in school canteens in 2012 in Jinjiang City and provide reference for the supervision and guidance of school canteens in the future. Methods According to GB 14934-1994 “food (drinking) with a disinfection health standards” in the rapid detection of coliform bacteria, school canteen cleaning and disinfection of various types of tableware ready for coliform bacteria sampling. Results A total of 1 790 samples of 179 tableware in the school were randomly selected. The total pass rate was 88.6% (negative control in blank control and 100% pass in quality control). Secondary school canteen tableware disinfection pass rate of 95.6% (306/320), followed by kindergarten 89.1% (936/1 050), the minimum primary school 81.9%; large tableware passing rate (96.9%) higher than the small tableware (75.3 %). Conclusion It is necessary to supervise the poor conditions of the school canteens to carry out self-examination and correction, implement corrective measures to improve the quality of tableware disinfection.
