通过比较奥利亚罗非鱼(Oreochromisaurea()♀)×鳜(Sinipercachuatsi()♂)杂交后代F3与母本奥利亚罗非鱼的含肉率和肌肉营养成分的差异,探讨杂交对改良子代肌肉品质的效应。结果显示,F3的含肉率显著低于母本;F3肌肉粗蛋白含量显著高于母本,粗脂肪含量显著低于母本;F3肌肉4种鲜味氨基酸含量均高于母本,且鲜味氨基酸总量显著高于母本,其余氨基酸含量和必需氨基酸指数基本介于奥利亚罗非鱼和鳜之间。研究结果提示,父本鳜在子代品质改良方面具有明显效应,尽管杂交影响F3的含肉率,但可显著提高其肌肉的鲜味及蛋白质含量。
