滕州市学校(幼儿园)食堂食品卫生监督量化分级管理结果分析

[目的]为加强学校(幼儿园)食堂的食品安全工作,有效防范食物中毒事件的发生。[方法]通过对滕州市辖区内80处学校(幼儿园)的84个食堂实施食品卫生监督量化分级管理前后的卫生状况进行比较并分析。[结果]量化分级管理实施前的84个食堂,“管理”实施后还有76个食堂,进行新、改、扩的食堂28个。76个食堂评出A级8个,占10.53%;B级32个,占42.11%;C级21个,占27.63%;D级15个,占19.73%。“管理”实施前、后食堂的卫生管理、基础卫生设施和加工过程的卫生状况进行比较,P<0.05,说明“管理”后明显好于“管理”前。[结论]量化分级管理实现了食品卫生监督从定性管理向定量管理的转变,卫生执法人员的管理理念得到了更新,把食品卫生信誉度低、食品安全风险度高的食堂作为监管重点,学校食堂的卫生状况得到了明显改善。 [Objective] In order to strengthen the food safety of school (kindergarten) canteens and effectively prevent the occurrence of food poisoning incidents. [Methods] The health status of the 84 canteens of 80 schools (kindergartens) in Tengzhou City was compared and analyzed before and after the implementation of the quantitative and hierarchical management of food hygiene supervision. [Results] In the 84 canteens before the implementation of quantitative grading and management, there were 76 canteens after implementation of “management ” and 28 canteens of new, changed and expanded. 76 canteens rated A level 8, accounting for 10.53%; B level 32, accounting for 42.11%; C level 21, accounting for 27.63%; D level 15, accounting for 19.73%. Before and after the implementation of “Management”, the health management of post-canteen, the basic sanitation facilities and the hygiene status of processing were compared before and after the implementation of “Management”, P <0.05, indicating that “management” was obviously better than that before “management”. [Conclusion] The quantitative and hierarchical management realized the transition of food hygiene supervision from qualitative management to quantitative management. The management idea of ​​health law enforcement officers was updated. The canteen with low food hygiene reputation and high food safety risk was the key point of supervision. The school cafeteria The health status has been significantly improved.
