目的了解上海市浦东新区生鲜食品中食源性致病菌污染状况。方法 2015年对9类生鲜食品进行致病菌检测,对分离株进行血清分群(型)。结果 1 202份食品中有494份检出致病菌,检出率为41.10%。分离出致病菌587株,副溶血性弧菌(194株)、气单胞菌(134株)、单核细胞增生李斯特菌(131株)为主要致病菌。第二季度检出率最高(47.85%)。虾类检出率最高(64.71%),不同食品中主要致病菌检出情况存在差异。副溶血性弧菌以O∶1群~O∶5群为主(81.96%),小肠结肠炎耶尔森菌以O∶8群和O∶5群为主(50.00%),气单胞菌以维隆气单胞菌为优势菌型(67.91%),弯曲菌以空肠弯曲菌和结肠弯曲菌为优势菌型(89.29%),沙门菌血清型分布呈多样性。结论上海市浦东新区生鲜食品中食源性致病菌检出率较高,分布呈多样性和典型的季节性特征,存在多种致病菌混合污染。
Objective To understand the contamination status of food-borne pathogenic bacteria in fresh food in Pudong New Area of Shanghai. Methods Nine kinds of fresh food were tested for pathogenic bacteria in 2015, and the isolates were divided into serogroups. Results Among the 1 202 food samples, 494 pathogens were detected and the detection rate was 41.10%. 587 strains of pathogens were isolated, Vibrio parahaemolyticus (194 strains), Aeromonas (134 strains), Listeria monocytogenes (131 strains) as the main pathogens. The second quarter the highest detection rate (47.85%). The highest detection rate of shrimp (64.71%), the detection of major pathogens in different foods are different. Vibrio parahaemolyticus was mainly O: 1 ~ O: 5 (81.96%), Yersinia enterocolitica was mainly O: 8 and O: 5 (50.00% The prevalence of Aeromonas hydrophila was 67.91%. Campylobacter jejuni and Campylobacter coli were dominant strains (89.29%). Salmonella serogroups showed a diversity distribution. Conclusion The detection rate of food-borne pathogens in fresh food in Pudong New Area in Shanghai is high, with a diversity and typical seasonal distribution. There are many kinds of mixed pathogens.
