食品营养作为高职旅游烹饪等专业中的一门核心课程,具有非常强的应用性及综合性,其教学内容主要包括讲解各类食品的营养价值,营养与人体健康之间的关系,人体对营养素的需求及合理膳食等。开展食品营养教学的目的除了让学生充分掌握营养知识以及合理膳食等基本技能外,更重要的是提高其自主学习、独立解决问题的能力。基于此,本文从“课证一体·双线融合”教学的相关概念出发,就此种教学理念在食品营养教学中的应用展开分析,以期为今后的教学工作提供参考。
As a core curriculum in higher vocational tourism and cooking specialty, food nutrition has very strong applicability and comprehensiveness. Its teaching content mainly includes explaining the nutritional value of various foods, the relationship between nutrition and human health, Nutrient needs and reasonable diet. The purpose of food nutrition teaching is to enable students to fully grasp the basic knowledge of nutrition and reasonable diet and other basic skills, but more important is to improve their ability to learn independently and solve problems independently. Based on this, this article starts from the related concept of “proofing one body and two lines fusion” and analyzes the application of this teaching concept in food nutrition teaching in order to provide reference for future teaching work.
