目的了解洛阳市食品中食源性致病菌的污染情况,为食品安全风险评估提供依据。方法采集洛阳市8大类180件食品,依据国家标准GB4789-2010,检测沙门氏菌、金黄色葡萄球菌、副溶血性弧菌、创伤弧菌、单增李斯特菌、大肠杆菌O157、阪崎肠杆菌、空肠弯曲菌8种致病菌。结果检测样品180份,检出致病菌29株,总检出率为16.11%。在8种致病菌中,以单增李斯特菌检出率为最高(6.67%),其次是沙门氏菌(3.89%)和金黄色葡萄球菌(3.33%),副溶血性弧菌为2.22%。在8类食品中,以肉与肉制品污染率最高(28.85%)其中生禽肉污染率为最高(68.75%),其次为餐饮食品(19.44%),其中鲜榨果汁污染率为最高(33.33%)。动物性水产品、豆制品、粮食加工品及米面制品等食品均存在不同程度的污染。结论洛阳市居民主要消费食品存在食源性致病菌污染,监督部门应提供有效的监管措施,避免食源性食物中毒的发生。
Objective To understand the contamination of food-borne pathogens in food in Luoyang and provide the basis for food safety risk assessment. Methods Eighty-eight foodstuffs were collected from Luoyang City. According to the national standard GB4789-2010, Salmonella, Staphylococcus aureus, Vibrio parahaemolyticus, Vibrio vulnificus, Listeria monocytogenes, Escherichia coli O157, Enterobacter sakazakii , Campylobacter jejuni eight kinds of pathogens. Results 180 samples were detected and 29 pathogenic bacteria were detected, the total detection rate was 16.11%. Of the eight pathogens, the highest detection rate was Listeria monocytogenes (6.67%), followed by Salmonella (3.89%), Staphylococcus aureus (3.33%) and Vibrio parahaemolyticus (2.22%). Among the 8 types of food, the highest contamination rate of meat and meat products (28.85%) was the highest (68.75%), followed by food and beverage (19.44%), of which the highest fresh fruit juice pollution rate was 33.33 %). Animal-derived aquatic products, soy products, processed food products and rice products have different levels of pollution. Conclusions There are food-borne pathogenic bacteria in the main consuming food of residents in Luoyang. Supervision departments should provide effective supervision measures to avoid the occurrence of food-borne food poisoning.
