目的了解杭州地区即食鱼类制品中铬(Cr)、镍(Ni)、无机砷(As)、镉(Cd)、锡(Sn)、汞(Hg)、铅(Pb)7种有毒元素污染状况,为完善水产制品中有毒元素限量标准和食品安全风险预警提供依据。方法 2016年在杭州地区的商店及网上商城随机抽取15类共132份即食鱼类样本,采用微波消解法进行样品处理,电感耦合等离子体质谱法和高效液相色谱-电感耦合等离子体质谱法进行有毒元素含量测定。结果所有样品中,只有部分食品镉含量超标,其余金属未发现超标。鳕鱼、鱿鱼和香鱼制品的镉超标率分别为21.1%、65.0%和30.0%,其中鱿鱼中镉超标情况最为严重。结论 2016年杭州市市售即食鱼类制品中7种有毒元素污染水平总体不高,但部分食品中镉污染情况相对较严重,建议加大监管力度。
Objective To understand the pollution status of seven kinds of toxic elements such as Cr, Ni, As, Cd, Sn, Hg and Pb in ready-to-eat fish products in Hangzhou area. , To provide basis for improving the limit of toxic elements in aquatic products and early warning of food safety risk. Methods A total of 132 samples of fish from 15 categories were randomly selected from stores and online stores in Hangzhou area in 2016. The samples were processed by microwave digestion method, inductively coupled plasma mass spectrometry and high performance liquid chromatography-inductively coupled plasma mass spectrometry Determination of toxic elements. Results In all the samples, only part of the food had excessive cadmium content and the rest of the metal was found not to exceed the standard. The over-standard rates of cadmium in cod, squid and sweetfish products were 21.1%, 65.0% and 30.0%, respectively, of which the highest level of cadmium in squid was the most serious. Conclusion The levels of seven kinds of toxic elements in commercial ready-to-eat fish products in Hangzhou in 2016 are generally not high, but the cadmium pollution in some foods is relatively serious, so it is suggested to intensify the supervision.
