为了掌握幼儿园膳食营养供给情况,自1988年起连续3年对我园4~6岁200名儿童进行了膳食调查。1 调查方法采用称重和记帐相结合的方法,于每年5月份连续6天逐日称重三餐食物,获得每种食物的生、熟重量,再记录幼儿各种食物的平均进食量,按生熟系数换算成生食物,计算每人每日各种营养素的平均摄入量。2 结果与分析各种营养素的摄入量以视黄醇摄入最为不足。分别将维生素A与胡萝卜素的摄入量折合
