为了解玉溪市第一幼儿园儿童的膳食结构和营养状况,采用称重法对该幼儿园就餐儿童进行了连续5天的营养调查。调查发现热量、蛋白质、钙、硒、VitB1摄入不足,分别达供给量的89%、75%、36%、61%、60%和72%;热量来源与分布不合理,碳水化合物与蛋白质供热比例偏低,而脂肪供热比例偏高;在蛋白质摄入总量中,优质蛋白质偏低;各餐热量分配不合理,早餐(19%)、午点(3%)供热比例偏低,而中餐(42%),晚餐(36%)供热比例偏高。
