目的通过对仿瓷餐具在浸泡液类型、浸泡温度、剪切程度三种不同条件下的游离甲醛迁移量的测定,判断其影响,分析其规律,使消费者对其达到一定的认识并避免潜在危害。方法按照国家食品安全风险监测化学污染物和有害因素工作手册中食品包装材料中,甲醛测定的标准操作程序第一法乙酰丙酮分光光度法及GB/T5009.156-2003食品包装材料及其制品的浸泡试验方法通则进行测定。结果以纯水为浸泡液、温度为室温、未剪切的餐具样品中均未检出甲醛;以4%的乙酸为浸泡液、温度为60℃恒温水浴、剪切后浸泡的餐具中游离甲醛的迁移量明显增加。结论仿瓷餐具在日常应用中应尽量避免盛装酸性和过热的食品,避免沸水消毒,如有破损,应立即停止使用。
