目的:了解食品中单核增生性李斯特菌(Listeria monocytogenes)的污染状况,为单增李斯特菌病的监控、检测以及追踪污染源提供依据。方法:对采自保定市各大超市及农贸市场的生肉、熟肉制品、海产品、速冻食品、水果、蔬菜、奶及奶制品、豆制品、腌制品等9大类食品426份样品进行单增李斯特菌的分离与鉴定。结果:检出了单增李斯特菌79株,英诺克李斯特菌7株,格氏李斯特菌32株,西尔李斯特菌2株,威尔斯李斯特菌1株,绵羊李斯特菌1株,默氏李斯特菌2株。李斯特菌的总检出率为29.1%,其中单增李斯特菌的检出率为18.5%。结论:保定市9大类食品中存在不同程度的单增李斯特菌污染,尤其在生肉中该菌的污染率高达32.4%,海产品中的污染率31.0%,应引起高度重视。
OBJECTIVE: To understand the contamination status of Listeria monocytogenes in food and provide the basis for monitoring, detecting and tracking the source of Listeria monocytogenes. Methods: 426 samples of 9 kinds of foodstuffs including raw meat, cooked meat products, seafoods, quick-frozen foods, fruits, vegetables, milk and dairy products, soy products and pickled products collected from the major supermarkets and farmers markets in Baoding Isolation and identification of Listeria monocytogenes. Results: 79 strains of Listeria monocytogenes, 7 strains of Listeria innocua, 32 strains of Listeria monocytogenes, 2 strains of Listeria monocytogenes, 1 strain of Listeria listeria, 1 strains of bacteria, 2 strains of Listeria monocytogenes. The total detection rate of Listeria was 29.1%, among which the detection rate of Listeria monocytogenes was 18.5%. Conclusion: There are different degrees of Listeria monocytogenes contamination in 9 kinds of food in Baoding, especially in raw meat, the contamination rate of the bacteria is as high as 32.4% and the pollution rate in seafood is 31.0%.
