萝卜是北京郊区栽培的主要蔬菜之一。不论是从全年蔬菜总供应量来看,或者是从冬春贮藏供应数量来看,都是仅次于白菜而居第二位。它从每年的10月开始大量供应,而于11月开始贮藏,一直可以供应到第二年的三、四月,长的甚至可到5月,贮藏期限几达半年之久,在解决北京多春的蔬菜供应上起了很大的作用。特别是一些生食用的萝卜品种,在春季正是水果极其缺乏的季节里,还起代替一部分水果的作用。对京郊菜农这一贮藏经验,加以系统和科学的分析总结,以供指导实践的参考实属必要。为
