鳀鱼是一种体长3～4寸、银灰色、侧扁、腹部呈圆柱形,眼和口较大的近海集群性小型鱼类。鳀鱼含有大量的蛋白质,其蛋白质含量和可食部分比例与马鲛鱼,带鱼基本相近,且优于鲐鱼。鳀鱼油的脂肪特性与金枪鱼油相近,是制取EPA和DHA的理想原料。过去,这种鱼是主要经济鱼类的饵料。近几年来,随着主要经济鱼类资源的衰退,该群体蕴藏量和可捕量明显增加,具有较大的开发前景和利用价值。
