酶解猪血纤维蛋白氨基酸种类齐全,必需氨基酸占氨基酸总量的40%,但由于氨基酸组成不够平衡,其营养价值不如酪蛋白。为提高其营养价值,本文进行了氨基酸组成的改善实验,并用化学分析法及生物学法对改善氨基酸组成后的酶解蛋白混合物(以下简称混合酶解蛋白)进行了营养评价。
Enzymolysis swine fibroin amino acid variety, essential amino acids accounted for 40% of the total amino acids, but because of the amino acid composition is not balanced, its nutritional value is less than casein. In order to improve its nutritional value, this paper carried out experiments to improve the amino acid composition, and used chemical analysis and biological methods to evaluate the nutrition of the enzymolysis protein mixture (hereinafter referred to as the mixed enzymolysis protein) after improving the amino acid composition.
