我国柑橘罐头出口占国际市场70%的份额。传统的人工去皮和酸碱脱囊衣工艺日益遭遇劳动力价格上涨、绿色壁垒和技术壁垒等问题,亟需开发新工艺。“柑橘酶法去皮和脱囊衣生产技术”是“十一五”科技重大专项《现代柑橘工业关键技术研究与示范》的主要研究内容。研究人员经过多年攻关,创制了配套的酶法全果去皮生产线和酶法脱囊衣自动流槽装置,中试效果显著。目前已申请发明专利5项(1项为国际发明专利)。实用新型专利1项。该成果也列入了农业部农产品加工局2008年重大产业技术推广项目。
