酱腌菜是以新鲜蔬菜为主要原料,经采用不同腌渍工艺制作而成的各种蔬菜制品的总称,包括各种酱菜、发酵与非发酵性各类腌菜和各类渍菜,如我们常见的榨菜、泡菜、糖醋蒜、酱黄瓜、甜酸、藠头、萝卜干、大头菜等。生产酱菜食品在我国历史悠久,遍布全国各地,过去这类食品多为各家各户自己制作,市售产品多为散装。近年来,随着我国经济的不断发展,人民生活水平的不断提高,居民家里已很少自制酱腌菜食品,转为在市场上购买。

The production of pickles food has a long history in our country, spread all over the country. In the past, many kinds of food were mostly made by all households, and most of the products sold in bulk were in bulk. In recent years, with the constant development of our economy and the continuous improvement of the people’s living standards, there have been few home-made preserved pickled food products in the residents’ homes and the products have been purchased on the market.
