脂肪酸值的大小及变化是判断粮食品质变化的重要指标,是现有分析粮食品质的一种重要方法。但其测定过程中的影响因素较多,测定结果的再现性也较差,文章对粮食脂肪酸值测定过程中的主要影响因素进行了分析和探讨。
The size and change of fatty acid value is an important index to judge the change of food quality. It is an important method to analyze the food quality. However, there are many influencing factors in the determination process and the reproducibility of the determination results is also poor. The main influencing factors in the determination of fatty acid content in food are analyzed and discussed.
