分析了盐析法直接提取的猪血浆蛋白质氨基酸组成,按AOAC大鼠生长试验法评价猪血浆蛋白的营养价值。猪血浆蛋白必需氯基酸含量占氨基酸总量41.6%,除蛋氨酸偏低外,其它必需氨基酸含量均接近或超过全鸡蛋蛋白质。单独喂饲猪血浆蛋白,幼大鼠体重增加虽不如酪蛋白组,但经蛋氨酸强化后的猪血浆蛋白组,其体重增加远远超过酪蛋白组,两组蛋白质功效比值(PER)分别为3.33±0.15和2.65±0.16。蛋氨酸强化的猪血浆蛋白化学评分为79,必需氨基酸指数为91,均远优于酪蛋白。表明猪血浆蛋白为优质蛋白质。加蛋氨酸强化更能显著提高其营养价值。
The amino acid composition of porcine plasma proteins directly extracted by salting out method was analyzed. The nutritional value of porcine plasma proteins was evaluated according to AOAC rat growth test. Pig plasma protein content of essential amino acids accounted for 41.6% of total amino acids, with the exception of methionine low, the other essential amino acids are close to or more than the whole egg protein. Pig plasma protein alone fed the rats, although the body weight gain was not as good as the casein group, the body weight gain of methionine-enhanced pig plasma protein group was much higher than that of casein group. The protein efficiency ratio (PER) was 3.33 ± 0.15 and 2.65 ± 0.16. The methionine-fortified porcine plasma protein has a chemical score of 79 and an essential amino acid index of 91, both far superior to casein. The pig plasma protein is a good protein. Plus methionine fortified more significantly improve their nutritional value.
