无菌包装技术诞生于20世纪40年代后期,随着60年代包装用塑料工业的迅速发展,无菌包装食品的各种优良特性被充分展现出来。到90年代初,液态或半液态食品的无菌包装产品在同类食品中,大包装超过80%、小包装超过50%。在固态或含固形物食品的无菌包装技术应用方面,日本已经在火腿、香肠等食品的无菌切片软包装中进行了工业化生产,效果优良,产品达到商业无菌要求,能实现常温下流通。70年代,无菌包装技术才开始引入我国,经30多年的发展,液态或半液态食品的无菌包装设备约有300台(套)在运行,年生产能力150万吨;固态或含固形物食品的无菌包装设备目前正处于研发成功和小规模推广阶段,它正以其传统加工方法无可比拟的优势,为我国农产品加工领域提供全新的技术平台,推动食品的保质保藏技术再创新高。
