目的了解周口市销售的熟肉制品中亚硝酸钠含量残留情况,防止亚硝酸盐对人体健康造成危害。方法按照《河南省食品安全风险监测实施方案》的要求,对周口市2014至2015年抽检的413份熟肉制品进行亚硝酸盐含量检测。结果抽检样品中亚硝酸盐含量超标144份,超标率为34.87%,最大值为1 370 mg/kg。农贸市场熟肉制品超标率(47.19%)高于其他制售单位,项城市熟肉制品超标率(58.70%)高于其他市区,差异均有统计学意义(均P<0.05)。结论周口市在售熟肉制品中加入亚硝酸盐的现象严重,特别是农贸市场和街头摊点上销售的散装熟肉制品中亚硝酸盐含量超标较高,有关部门应加强监督管理。
Objective To understand the residual sodium nitrite content of cooked meat products sold in Zhoukou City and to prevent the harm of nitrite to human health. Methods According to the requirements of “Implementation Plan of Food Safety Risk Monitoring in Henan Province”, 413 samples of cooked meat products sampled from 2014 to 2015 in Zhoukou were tested for nitrite content. Results In the sampling sample, the content of nitrite exceeded the standard by 144 samples, the exceeding standard rate was 34.87% and the maximum value was 1 370 mg / kg. The exceeding rate (47.19%) of cooked meat products in the farmer’s market was higher than that of other units. The exceeding standard rate (58.70%) of cooked meat products in Xiangcheng City was higher than that in other urban areas (all P <0.05). Conclusion Zhoukou City, the sale of cooked meat products, the phenomenon of adding nitrite serious, especially in farmers markets and street stalls selling cooked cooked meat products in excess of high levels of nitrite, the relevant departments should strengthen supervision and management.
