“民以食为天,食以安为先”。食品的安全不仅关系到人的生存和身体健康,而且关系到民族的素质与兴衰,在国际贸易交往中还直接影响到一个国家的声誉,近些年来倍受世人的关注,是一重要的公共卫生问题。由于自然环境的变化,人们工作、生活方式的改变,随着食品贸易的全球化、都市化,新的食品生产、利用,自然的和人为的因素降低了食品的安全性,使食源性疾病的发病、食物中毒时有发生,新的食源性病原体感染不断出现,严重地损害人类的健康,也给经济造成重大影响。因此,食源性疾病已成为目前国际上最突出的公共卫生问题之一。
