嗜盐菌在自然界分布较广,尤以海产品为甚。该菌经常引起食物中毒发生,是我国沿海地区的主要食物中毒菌。有关该菌的分布情况、培养特性、生化及血清学特性、嗜菌体分型、致病性等方面,我们曾进行了系统的研究。实践表明,由海产品及外环境检出的菌株多为蔗糖阳性,而由中毒患者检出的菌株则以蔗精阴性为主,因而在食物中毒暴发后,由中毒食品和中毒患者检出的嗜盐菌经常不能相互联系在一起,这给食物中毒菌的确定和追源工作,带来了很大影响。另外,它也提示出一个新的问题,即为什么由中毒患者检出的菌株多为蔗糖阴性,而中毒食品却多为蔗糖阳性呢?为什么中毒食品中蔗
