目的了解糕点类食品卫生现状,为卫生监督执法和卫生评价提供依据。方法对沭阳地区2008—2010年156家食品生产企业进行糕点类食品抽检,评价其合格情况。结果:共检测糕点类食品标本921份,828份卫生指标符合国家标准,合格率为89.9%,不合格样本主要是微生物超标,该类产品均为小作坊类单位生产。结论应加强对食品生产企业的卫生监督监测,尤其是要进一步加强对小作坊类的监督管理。
Objective To understand the status quo of food hygiene of cakes and provide the basis for health supervision and law enforcement and health evaluation. Methods A total of 156 food production enterprises in Shuyang region from 2008 to 2010 were sampled for sampling and their qualifications were evaluated. Results: A total of 921 samples of pastry food products were detected. 828 hygiene indicators were in compliance with national standards, with a pass rate of 89.9%. The unqualified samples mainly contained excessive amounts of microorganisms, all of which were produced by small workshop units. Conclusion Health supervision and monitoring of food production enterprises should be strengthened. In particular, the supervision and management of small workshops should be further strengthened.
