目的了解江都区市场上熟肉制品中亚硝酸盐残留量情况,为监督监测工作提供参考。方法 2011—2013年,对区中心和周边乡镇酒店的熟肉制品进行随机抽样,按相关国标要求检测亚硝酸盐残留量。结果 2011—2013年共抽检熟肉制品671份,合格率为94.2%,各年分别为94.8%、92.6%、94.8%,差异无统计学意义(P>0.05)。除泡椒凤爪外,其他样品亚硝酸盐均有检出,检出率35.9%。区中心酒店合格率(95.6%)高于周边乡镇酒店(91.7%),差异有统计学意义(P<0.05)。结论本区城乡饭店熟肉制品中亚硝酸盐残留量检测结果总体较好,但个别种类合格率偏低。应加大对区周边乡镇酒店的检查力度,及时发现生产过程中违规使用亚硝酸盐的问题。
Objective To understand the situation of nitrite residues in cooked meat products in Jiangdu market and provide reference for monitoring and monitoring. Methods From 2011 to 2013, the cooked meat products of the district center and surrounding township hotels were randomly sampled, and the nitrite residues were tested according to the relevant national standard.
