食用菌属于微生物,是可以供人们食用及药用的大型真菌。其蛋白高、脂肪低,富含多种对人身体有益的营养成分,如氨基酸、糖、微量元素、矿物质等,人们多食用食用菌,可以提高人体免疫力、增强体质。随着人们对食用菌营养保健功能的认识,市场需求逐年增加,生产规模逐年加大。我国食用菌栽培种类达90多种,为世界食用菌栽培种类最多的国家。2013年我国食用菌总产量超过2 800万吨,生产规模居世界第一位。
