近日上网,发现有相关部门列举了国家级已故名厨46人的事迹,并附有他们的生前照片。河北籍已故名厨,唯一榜上有名者是袁清芳先生。因我与袁先生的弟子剧建国、刘恒忠等人情深意笃,常在中华饭庄晤面(袁先生曾任中华饭庄主厨),故多次见过袁先生。在我心目中,袁先生是一代宗师。学徒8年,他练就了一身本领袁清芳生于1901年,祖籍保定清苑县郎庄村。解放前家境贫寒,只上过两年小学。16岁到保定宴春园饭店学徒。24岁出徒后先后在保定、山西、正定等地闯荡江湖。
