在《中国居民膳食指南》中把蘑菇归为菌藻类,这类食物除了各种蘑菇外,还有木耳、紫菜、海带等。蘑菇中除了有海藻类所含的营养素外,还含有蘑菇多糖。蘑菇多糖能提高人体免疫力,还有降低血糖、血脂和胆固醇的作用。然而,有关“蘑菇富集重金属”的说法一直流传。这种说法称,蘑菇富集重金属的能力特别强,几乎所有重金属都会富集在蘑菇中,建议少吃蘑菇。这种说法吓到了不少人,对于喜爱吃蘑菇的人更是晴天霹雳!
