系统比较柿皮、柿肉、柿蒂及柿核单宁提取物对二苯代苦味酰自由基(DPPH·)、·OH、2,2’-联氮-双-(3-乙基苯并噻唑啉-6-磺酸)3种自由基(ABTS+·)的清除效果。结果表明,不同部位的柿子单宁提取物对·OH、DPPH·和ABTS+·均具有较高的清除能力,但不同部位柿子单宁提取物对自由基清除效果存在差异,对上述3种自由基清除能力均为柿肉单宁>柿皮单宁>柿核单宁>柿蒂单宁,且柿子各部分单宁提取物对OH·、DPPH·的清除能力均高于同浓度的葡萄籽提取物。
