Protein fractions in four buckwheat varieties of Japanese spring buckwheat,Japanese summer buckwheat,Yuqiao No.1 and Yuqiao 6 21,were extracted by successive extraction method and analyzed.Amino acid composition and mineral content in each protein component were also analyzed.Based on the data of experiment,the relationships between protein fractions and amino acid,and mineral element content of protein fractions,the distribution and proportion of amino acid and mineral element in each protein fractions in buckwheat kernel,as well as the nutrition of buckwheat kernel were discussed.The results show that the soluble protein content is high and prolamin content is very low in buckwheat kernel.Leucine is the first limited amino acid in buckwheat. The buckwheat kernel is rich of K,Zn in albumin,Ca,Mg,Mn in globulin,Na in prolamin and glutlin.
