莼菜又名马蹄草,是睡莲科的多年生水生草本植物。分布于亚洲、北美洲、非洲和澳大利亚。我国的江苏、浙江、江西、湖南、四川和云南等省都有分布。它的嫩梢质地柔滑、粘液多,风味独特,并含有多种糖类、蛋白质、脂肪、磷和铁等营养物质,所以很早便为制作高级汤菜的原料。我国史书记载,自晋代即有莼羹、菰菜、(鱼户)鱼脍三大江南名菜。如今莼菜由于国内外的需求骤增,已成为紧俏的出口蔬菜。因此,了解莼菜的特点及其生长发育规律,采取合理的栽培措施和妥当的加工方法,才能让更多的人享受到这种美味佳肴。
