葡萄糖氧化酶广泛应用在食品保鲜、医学诊断和生物化学等领域,但其容易因pH和温度等环境条件的变化而失活。因此,保护葡萄糖氧化酶在严苛的环境条件下免受分解和抑制具有十分重要的意义。将葡萄糖氧化酶成功包埋入聚丙烯酸-阳离子淀粉聚电解质胶囊中,研究不同pH和温度对葡萄糖氧化酶的活性影响情况。结果表明,经聚电解质胶囊包埋后,葡萄糖氧化酶在不同pH和温度条件下的活性和稳定性均得到显著改善。
Glucose oxidase is widely used in food preservation, medical diagnosis and biochemistry fields, but it is easily inactivated due to changes in environmental conditions such as pH and temperature. Therefore, it is of great importance to protect glucose oxidase from decomposition and inhibition under harsh environmental conditions. The glucose oxidase was successfully embedded in polyacrylic acid - cationic starch polyelectrolyte capsules to study the effects of different pH and temperature on the activity of glucose oxidase. The results showed that the activity and stability of glucose oxidase under different pH and temperature conditions were significantly improved after polyelectrolyte encapsulation.
