报道纳氏试剂比色法测定食品中蛋白质的实验条件,12种样品与 GB 凯氏定氮法测定结果比较,基本一致。该法测定5个不同样品的标准差为0.03~0.30,变异系数为0.6%~3.3%范围,平均回收率为99.76%。
Reported Nessler reagent colorimetric assay of protein in the experimental conditions, 12 samples and GB Kjeldahl determination of the results are basically the same. The standard deviation of the five different samples was 0.03 ~ 0.30 and the coefficient of variation was 0.6% ~ 3.3%. The average recovery was 99.76%.
