目的探索建立自动量热仪测定食品能量的方法及评价。方法称取1g样品及苯甲酸标准物,置于自动量热仪氧弹的坩埚中,再加入10ml水于氧弹内。在密闭及充足氧气的条件下,点火令样品燃烧后,使水温升高,显示结果,在操作质量合格的前提下,检测8种包装婴幼儿食品,采用自动量热仪进行测定食品能量。同时采用计算法测定食品能量,并进行比较。结果2种方法测定食品能量(16.83~21.34MJ/kg与16.10~19.44MJ/kg)差异无统计学意义,可互相代替。被检食品能量均合格。结论应用自动量热仪检测食品能量的自动化程度高、操作简便、灵敏和准确。
Objective To explore the establishment of automatic calorimeter method for the determination of food energy and evaluation. Method Weigh 1g sample and benzoic acid standard, placed in a crucible automatic calorimeter oxygen bomb, then add 10ml of water in the oxygen bomb. In airtight and adequate oxygen conditions, the ignition after the sample combustion, the water temperature rise, the results show that the quality of the operation under the premise of testing eight kinds of packaged infant food, the use of automatic calorimeter for the determination of food energy. At the same time, the energy of food was determined by calculation and compared. Results There was no significant difference between the two methods in determining food energy (16.83-21.34 MJ / kg and 16.10-19.44 MJ / kg), which could be replaced by each other. The seized food energy are qualified. Conclusion The application of automatic calorimeter to measure the energy of food is highly automated, easy to operate, sensitive and accurate.
