目的调查连锁超市中熟肉制品和糕点的卫生状况,为相关卫生部门提供相关工作依据。方法对北京市26家连锁超市中的熟肉制品和糕点进行随机采样及对所采样品进行微生物学检测,并分析记录资料。结果部分连锁超市中的熟肉制品和糕点存在卫生状况安全隐患,熟肉制品的合格率为88.3%;糕点的合格率为99.3%。结论卫生行政部门应加强对连锁超市中熟肉制品和糕点的卫生监测和检查,同时努力提高从业人员的卫生素质,监督并指导其食品的进货渠道、加工手段及保存方法,减少由此可能引发的食源性疾病的暴发,保证人民群众的身体健康。
Objective To investigate the health status of cooked meat products and cakes in supermarket chains and provide related work basis for related health departments. Methods Random sampling of cooked meat products and cakes in 26 supermarket chains in Beijing and microbiological tests on the sampled samples were carried out and the recorded data were analyzed. Results Some cooked meat products and cakes in some supermarket chains had potential health risks. The passing rate of cooked meat products was 88.3%, and the passing rate of cakes was 99.3%. Conclusions Health administrative departments should strengthen the hygiene monitoring and inspection of cooked meat products and cakes in supermarket chains, and at the same time make efforts to improve the hygiene quality of employees, supervise and guide the purchasing channels, processing methods and preservation methods of their products, Outbreak of food-borne diseases to ensure the health of the people.
