对新疆不同地区收集的杂草型黑麦籽粒品质研究结果表明:①107份材料蛋白质平均含量14.1%,变异幅度10.2%~20.0%,变异系数11.6%;②地区间蛋白质含量变化范围13.1%~15.0%,变异系数5.7%;③17种氨基酸分析结果,半胱氨酸、苏氨酸、蛋氨酸、丙氨酸、脯氨酸、丝氨酸等变异最大。甘氨酸、赖氨酸相对稳定。不同地区存在差异。人体必须的7种氨基酸中只有赖氨酸、苏氨酸高于小麦。④当各种氨基酸含量以种子重量为基础表示时,与蛋白质含量相关性是:异亮氨酸与蛋白质无相关性,蛋氨酸、酪氨酸、缬氨酸与蛋白质含量呈正相关,其余氨基酸与蛋白质呈极显著正相关。
