(一)本试验是选择江西省出产的九种粮食作蛋白质的定量分析。(二)食用白米与芋头的蛋白质含量与中国医学科学院所发表者大致相同。(三)花生、黄豆、青豆及绿豆的蛋白质含量较中国医学科学院所发表者为高,其中尤以黄豆高得最多。(四)小麦及番薯的蛋白质含量较低,尤以番薯低得最多,不管是在红土出产的或在一般土壤出产的都较中国医学科学院所发表者低一倍或一倍以上。
