目的:研究牡蛎所含有机质的成分及活性。方法:以牡蛎壳粉为原料,水煎提取有机质,通过双缩脲法进行定性分析和含量测定,再通过阴离子交换层析和反向C8柱层析分离,得到牡蛎壳寡肽产品,并进行抗氧化性能考察。结果:牡蛎有机质提取物主要为寡肽类成分,总肽含量约为38.02%,产物具有较强的清除DPPH·自由基和超氧阴离子自由基的能力。结论:牡蛎壳寡肽是具有良好开发前景的抗氧化活性物质。
Objective: To study the composition and activity of organic substances in oysters. Methods: Oyster shell powder was used as raw material, and the organic matter was extracted by water decoction. Qualitative and biochemical determination was carried out by biuret method. Oyster shell oligopeptide product was obtained by anion exchange chromatography and reversed-phase C8 column chromatography. Antioxidant performance inspection. Results: The main components of oyster organic extract were oligopeptides. The total peptide content was about 38.02%. The product had strong ability of scavenging DPPH radical and superoxide anion radical. Conclusion: Oyster shell oligopeptide is a promising antioxidant active substance.
