黄曲霉毒素(AF)是谷物污染的主要污染源之一,是由黄曲霉菌及寄生曲霉菌产生的次生代谢产物,是当前毒性和致癌性最强的物质之一。用黄曲霉毒素污染的粮食饲喂动物会导致中毒、急性肝损伤和肝癌,还可导致多脏器损伤,生产性能下降和抗病能力降低,甚至死亡,给畜牧业带来巨大的经济损失。此外,黄曲霉毒素对人体存在巨大危害,当人体摄入大量黄曲霉毒素,可发生急性中毒,出现急性肝脏损伤;而当微量持续摄入,可造成人体慢性中毒。文章主要从黄曲霉毒素对家禽免疫器官结构功能、免疫基因表达和免疫抑制等几个方面的影响进行论述。
Aflatoxins (AF), one of the major sources of cereal pollution, is a secondary metabolite produced by Aspergillus flavus and Aspergillus parasiticus and is currently one of the most toxic and carcinogenic substances. Animal feed contaminated with aflatoxin can cause poisoning, acute liver injury and liver cancer, but also lead to multiple organ damage, decreased performance and reduced disease resistance, and even death, bringing huge economic losses to livestock husbandry. In addition, aflatoxin has great harm to the human body. When the human body ingests a large amount of aflatoxins, acute poisoning may occur and acute liver damage occurs. When the trace amount of the aflatoxin is continuously ingested, it can cause chronic poisoning in the human body. The article mainly discusses the influence of aflatoxins on the structure and function, immune gene expression and immunosuppression of immune organs in poultry.
