1 影响食品监测合格率的因素及统计计算存在的问题 影响食品监测合格率的客观因素就在于食品本身的卫生质量,其根本原因是食品生产经营过程中对卫生的控制程度,是遵守卫生规范的具体体现。但食品监测合格率受主观人为因素的影响也是绝不容忽视的。这些人为因素的影响使食品监测合格率根本无法反映食品卫生质量的真实情况。1.1 统计计算方法不合理 食品监测合格率为各类食品监测合格率和总的监测合格率。目前在统计总食品监测合格率时,用简单的加法进行计算,即将各类食品的监测数、合格数分别相加,求得百分比。这种计算方法受所监测各类食品的构成比影响较大,即
