北京市大兴区餐饮服务人员食品安全知识现状调查

目的通过了解北京市大兴区餐饮服务人员食品安全知识掌握情况,为今后开展该行业健康教育与促进工作和提高餐饮服务水平提供依据。方法随机抽取大兴区82个餐饮服务单位的246名餐饮服务人员进行调查,数据用SPSS 16.0软件进行统计分析。结果大兴区餐饮服务从业人员食品安全知识总体掌握情况较好,综合及格率为80.7%,部分餐饮服务从业人员对什么是食品,如何使用食品添加剂,如何记录进货内容等基本的食品安全知识知晓率较低,不同学历和岗位的餐饮服务从业人员对食品安全知识的掌握情况有统计学意义(F=4.523和F=4.551,均P<0.05)。结论应继续加强餐饮服务人员食品安全知识培训,将知晓率和形成率低的知识、态度与行为做为食品安全知识培训的重点内容,不断提高其食品安全知识水平,规范职业行为。确保各项食品安全制度的有效落实 Objective To understand the food safety knowledge of foodservice staff in Daxing District of Beijing and to provide basis for carrying out health education and promotion work and improving catering service level in the future. Methods A total of 246 foodservice staff from 82 catering service units in Daxing District were randomly selected and investigated. The data were analyzed by SPSS 16.0 software. Results The food safety knowledge of catering service practitioners in Daxing District had a good general knowledge of food safety and the overall pass rate was 80.7%. Some foodservice practitioners knew about food safety, how to use food additives, and how to record the purchase of food and other basic food safety knowledge The knowledge of food safety was lower in food service workers with lower education background and different qualifications (F = 4.523 and F = 4.551, all P <0.05). Conclusions Food safety knowledge training for catering staff should be further strengthened. Knowledge, attitudes and behavior with low awareness and formation rate should be taken as the key contents of food safety knowledge training so as to continuously improve their food safety knowledge and standardize their occupational behaviors.
