报道了当前云南省大面积生产中１４个小麦品种的理化性质和面团流变学性质的测定结果，分析了云南省小麦品质的现状。
The physical and chemical properties of 14 wheat cultivars in large-scale production in Yunnan Province and the determination of the dough rheological properties were reported. The current status of wheat quality in Yunnan Province was analyzed.
