为保障人民的身体健康,改善我市中小型饭店食品加工间卫生状况,对辖区内中小型饭店加工间的卫生状况进行评价。1 对象与方法 对辖区内正在营业的饭店随机分别抽取市区、乡镇中型各15个。在不预先通知被监督单位的情况下,对加工间卫生状况、餐具消毒、冷拼间的设置进行调查和综合评价。2 结果与讨论2.1 加工间面积和卫生现状 调查的60家饭店中,加工间窄小、三防设施不全、墙壁油泥厚、蝇多的占42%。加工间面积最小的不到5m~2,而餐厅面积最小的也在20 m~2以上。表现为餐厅富丽堂皇,加工间窄小脏乱,导致内环境脏乱。
