以香菇66#菌株为试材,采用液体发酵方法,研究了菌丝球数量、pH值、还原糖含量、氨基氮含量、纤维素酶活性、漆酶活性、蛋白酶活性等对香菇菌丝生长主要生理指标的影响。结果表明:当香菇菌株在26℃、160r/min摇床振荡培养至第8天时,菌丝球数量最多。此时,发酵液pH 6.5,还原糖和氨基氮含量分别为47.12mg/100mL和11.87mg/100mL,纤维素酶活性、漆酶活性和蛋白酶活性分别为1.25、0.023、0.18U。
