党的十八大明确提出要高度重视和解决食品质量安全问题。食品质量安全问题在一定程度上可以看作食品的生产、经营者在一定的资源、制度和技术的约束下所表现出来的机会主义行为,实际上是食品产业链上生产者、经营者、消费者和政府在技术经济约束下围绕各自目标所进行的行为博弈的结果。从经济学的角度剖析食品产业质量安全问题,不仅有利于深入理解这一问题发生的机理,而且更有利于找出如何促进食品市场良好运行的机制,遏止食品质量安全问题频出的势头。

To some extent, the problem of food quality and safety can be regarded as the production of food. The opportunistic behavior exhibited by operators under the constraints of certain resources, systems and technologies is actually the result of producers, operators and consumers in the food industry chain And government under the technical and economic constraints around the respective goals of the behavior of the game. To analyze the quality and safety of the food industry from an economic point of view is not only conducive to a deeper understanding of the mechanism of this issue but also helps to find out how to promote the good functioning of the food market and curb the frequent occurrence of food quality and safety issues.
