陕西市售国产葡萄酒中多酚类物质的特征与抗氧化能力分析

以陕西市售国产葡萄酒为样本,通过评价其多酚成分与抗氧化能力,分析其产品质量与健康价值。采用Folin-Ciocalteu法测定总酚、三氯化铝法测定总类黄酮、DMACA法测定总黄烷-3-醇、pH示差法测定总花色苷含量;HPLC法测定单体酚;DPPH法测定抗氧化能力。结果显示,陕西市售国产葡萄酒多酚类物质含量较高,单体酚组成丰富,符合葡萄酒类型、产地与品种特征。但也有个别样品有外源添加多酚类物质。陕西市售国产葡萄酒中无半汁或掺假葡萄酒存在。并且,陕西市售国产葡萄酒抗氧化能力较高,具有一定的健康价值。与单纯依靠品酒师来评估葡萄酒质量,受限于专业水平与个人喜好相比,以多酚组成、抗氧化能力等参数来对葡萄酒质量进行评估是可行的,行之有效的一种方法。本研究结果有助于为消费者提供除价格外的新的参考。 Taking the domestic wines made in Shaanxi Province as samples, the product quality and health value were analyzed by evaluating its polyphenol composition and antioxidant capacity. Total phenols were determined by folin-Ciocalteu method, total flavonoids were determined by aluminum trichloride method, total anthracene-3-ol by DMACA method and total anthocyanin content by pH differential method. Oxidation ability. The results showed that the content of polyphenols in domestic wines sold in Shaanxi Province was high, and the content of monophenols was rich, which was in line with the types of wine, origin and varieties. But there are also some samples of exogenous polyphenols added. There is no half-juice or adulterated wine in domestic-made wines in Shaanxi. And, the domestic sales of domestic wines in Shaanxi higher antioxidant capacity, has a certain health value. It is feasible and effective to evaluate the quality of wine with the parameters of polyphenol composition and antioxidant capacity, compared with the reliance on the sommelier to evaluate the quality of the wine, which is restricted to the professional level and personal preference. The results of this study contribute to providing consumers with new references beyond price.
