研究了几丁质衍生物对4~8℃条件下,不同贮存期的草莓中SOD(超氧化物歧化酶)活力和Vc含量的影响。结果表明,经几丁质处理的草莓贮存到15~20天时,其SOD活力比未处理的草莓高20.1%~53.4%。Vc的含量高78%~165%。几丁质溶液在草莓的表面形成半透膜,阻止了微生物的侵染,抑制了草莓的呼吸作用。
The effects of chitin derivatives on SOD (superoxide dismutase) activity and Vc content in strawberry at different storage periods at 4 ~ 8 ℃ were studied. The results showed that when the chitin treated chrysanthemum was stored for 15-20 days, its SOD activity was 20.1% -53.4% higher than that of the untreated strawberry. Vc high content of 78% to 165%. Chitin solution forms a semi-permeable membrane on the surface of strawberries, preventing microbial infection and inhibiting the respiration of strawberries.
