茭白又名茭瓜、茭笋,是禾本科多年生草本作物,在长江流域及以南地区栽培较广,是大众喜爱的蔬菜之一。茭白有一熟茭和两熟茭两个类型。两熟茭又称两季茭,种植一次收获两次。第一次在种植当年的10月底始收,产量较低;第二次在次年4~6月收,产量较高。茭白要适时采收。当茭白花茎上的中心叶紧密,两张外叶向花茎合拢,心叶短于外叶,叶梢形成“白眼”,白眼处收缩像蜂腰时,便可采收。准备贮藏的茭白应留30厘米左右长的叶梢,以保护茭肉。贮藏方法有以下几种:
